Construction of this unique mobile pizzeria commenced in the summer of 2021. A 20' shipping container was mounted on a 2007 International Harvester 4300 DT466 diesel truck chassis. The entire side of the shipping container was removed and framed in with steel rectangular tubing to form doors, windows, and a service area. Outfitted with top of the line equipment used very lightly. All electricity is provided by solar panels incorporated on the truck and is the only one of it's kind. All recipes and formulas would be included and the owners would be available on a limited basis for training.
GVWR: 26,000 lbs.
The following is a description of the equipment and various systems:
1. Oven
- The oven is a Woodstone 6' Mt. Baker series that is fitted with both radiant flame and underfloor infrared burners. A 120 gallon propane tank is mounted to the rear of the truck which also serves as a wood storage area.
3. Solar power system
- 12ea 300 Watt solar panels for a total capacity of 3600 Watts
- Magnum PT 100 charge controller
- Magnum 4400 Watt inverter
- 34 kW lithium ion battery storage.
- Solar panels are lifted into operational use by two winches with remote controls
- Customers place their orders via a self service kiosk on a 12.9" Apple iPad. The overall system is powered by an Apple miniMac, which interfaces a Square credit card terminal, a kitchen display system and fully integrates with Square. The self service kiosk system has been popular with customers and has eliminated the need for a staff position for taking orders. The software running the self service kiosk is a subscription service per month.
